2 tsp yeast
1 tsp sugar
½ cup lukewarm water
5 cups flour
1 tsp salt
1 cup evaporated milk
2 eggs
Water, as needed
1 ½ cups zaatar
¾ cup olive oil or corn oil
- Dissolve yeast and sugar in water and let stand until frothy.
- Sieve flour, salt and milk in a bowl and mix well.
- Beat eggs and add to the yeast mixture then pour over flour, adding water as needed to bring dough together.
- Knead the dough until smooth and place in a bowl covered with a damp cloth and proof until double in size.
- Divide dough into balls and roll out to form a circle about 3 mm thick.
- Place dough in an oiled sheet tray.
- Combine zaatar and oil and spoon in the middle of dough circles spreading zaatar evenly over dough.
- Bake in a hot oven for 10 – 20 minutes or until golden brown.
- Serve warm or cold.
