1 kg green fava beans, peeled
1 cup olive oil or sunflower oil
2 bunches coriander, chopped
1 garlic bulb, peeled and finely chopped

Spring onions
- Sauté fava beans in hot oil.
- Add salt and pepper and place lid on and simmer over very low heat.
- When cooked, add coriander and garlic and simmer for a further 2 minutes.
- Serve cold with yoghurt and spring onions.
