Serving/holding temperature:

Holding temperatures are : Hot-140 degrees or above

cold 36 degrees or lower without freezing

Serving temperatures are: Hot -100 to 105 degrees

Cold - 36-59 degrees

Sensitivity to hot and cold: Very important. Many children are sensitive to hot and cold. Should watch for sensitivity when giving a new food to any child. Special needs children can be extra sensitive to extremes in temperature.
