  Abstract

The food security challenge – contribution of modern food chain management to food security
Food Chain Management focuses on the chain of food manufacturing as an integral process extending from the primary production via processing and trade until reaching the consumers. The aim is to analyze and optimize these processes in order to finally supply consumers with qualitatively spotless food. Food Chain Management avoids deficits in the value chains – therefore Food Chain Management offers the optimal approach for ensuring food quality and its traceability. Significant aspects of Food Chain Management are… * Food safety, * Food quality and food security * Traceability of food. The Fraunhofer »Food Chain Management« Alliance - in total consisting of ten institutes - aims at introducing latest scientific know-how in new products and solutions of this field by means of mutual projects. Within this process, new approaches in food safety, microelectronics and logistics, which can easily be integrated in the entire food chain and exhibit an added value as high as possible at low costs are of crucial significance. At the same time, they are supposed to ensure food security, food quality and, thus, to achieve high consumer acceptance. In addition, the Fraunhofer Food Chain Management Alliance acts as a competent contact partner and problem solver, both for industrial partners and SMEs as well as institutional funding organizations on a national, European and global level.
